Viticulture
Monastrell, which provides vegetal aromas and good acidity, comes from trellised vines in plots with clayey-calcareous soils, located near the municipality of Torrelles de Foix, in the Alt Penedès region. The Trepat allows us to create light, fresh, and fruity sparkling wines with marked acidity that are surprisingly delicate.
Production
Traditional Method. Separate fermentation in stainless steel tanks at a controlled temperature. To preserve its quality, we produce a free-run must with character and a differentiated typicity. Second fermentation in the bottle with selected yeasts, followed by ageing on lees for 20 months, develops complexity while maintaining its freshness. After disgorging, we add a small portion of our free-run must to give it its distinctive seal.
Tasting Notes
It has a subtle pale pink colour with bright highlights, fine, persistent bubbles, and a medium-length development. The nose is clean and elegant. Aromas of red fruits, especially strawberries and raspberries. The palate is rich in flavor, fresh, and has magnificent acidity. It is refined and elegant, with a very good carbonated creaminess. Balanced, round, and elegant.
