Tinta del País from the El Cardenal estate, a 5.3-hectare vineyard located at 880 meters above sea level in the province of Burgos. The soil is composed of limestone sediments, clayey soils, and stony areas in the higher parts of the estate, providing complexity and structure to the wine. Vineyards average 50-70 years of age.
Production
Pre-fermentation cold maceration. Skin crushing to extract the base wine, then pressing. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature. Post-fermentation maceration. Malolactic fermentation is carried out in stainless steel tanks and barrels. Ageing is carried out for a minimum of 10 months in semi-new 225-litre American oak barrels and 7 months in newly used French Allier oak barrels with medium toasting. Clarification and stabilisation. To preserve its quality, it is not subjected to any physical treatment, which may cause slight precipitation. Vinified and bottled on the property, it rests for a minimum of 12 months in the bottle before being released.
Tasting Notes
Intense purple, with aromas of ripe fruit and fine toasted oak notes. The palate presents a well-structured palate with mineral notes, spices of vanilla, liquorice, and cloves from its ageing in French oak barrels, and toasted and roasted notes. The palate is fleshy, velvety, structured, and round. It reveals a broad intensity of fruit thanks to its balanced acidity despite its long ageing.
