Viticulture
The El Beset estate covers 1.8 hectares at 365 meters above sea level, with a mild, generally warm, and temperate climate. The different plots have soils poor in organic matter but with good water retention. The vineyards average over 30 years of age.
Production
Traditional Method. Separate fermentation in stainless steel tanks at a controlled temperature. To preserve its quality, we produce a free-run must with character and a differentiated typicity. Second fermentation in the bottle with selected yeasts, followed by ageing on lees for 42 months, develops complexity and maintains its freshness. After disgorging, we add a small portion of our free-run must to give it its distinctive seal.
Tasting Notes
It has a straw-yellow colour with golden highlights and fine bubbles. The nose is clean, offering fine aromas of prolonged ageing interspersed with white flowers and pineapple. Well-balanced, defined, and full-bodied, with a good presence of carbon dioxide and a pleasantly marked acidity. It is flavorful, smooth, and long-lasting. Notes of bottle ageing dominate.
