Tasting notes

Pale golden color. On the nose, floral notes such as flowering tree, acacia and chamomile, are perceived due to the aging in acacia barrels of 500 liters of first use. It presents aromas of citrus fruit like grapefruit or lemon. Fresh acidity, wrapped in a complex background of mineral aromas with notes of yeast, toasted butter and honey. In the mouth it shows a great balance between acidity, freshness and volume. Long and delicate finish.

Winemaker notes

Cultivation of the vine in glass with minimal intervention. The soil is calcareous, with clays and dolomites, where conglomerate nodules formed with gypsum and sand, containing flint, provide great minerality. Low-yield strains where we prioritize the quality of the grape over the quantity. The harvest is manual in 12 kg boxes for greater agility when entering the winery. Fermentation takes place at a controlled temperature in stainless steel tanks with native yeasts. It is aged for 9 months in first-use acacia barrels of 500 l on its lees with light periodic stirring, to remain another 11 months in the bottle before being released to the market.
